By using up six yolks, egg yolk cookies help ensure that nothing goes to waste, whether you are making <a href=\"https:\/\/boingboing.net\/2012\/09\/04\/the-history-and-science-of-mer.html\" target=\"_blank\" rel=\"noopener\">meringues<\/a> or simply enjoy eating egg whites for breakfast.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p3\">These egg yolk cookies cookies are tender inside with a slightly crunchy outside. And they\u2019re loaded with seasonal spices and a hit of orange liqueur. (If you\u2019d rather not use the liqueur, simply substitute all fresh orange juice.)<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p3\">Plan ahead because the dough does need to rest for 30 minutes in the refrigerator before you roll and bake the cookies.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p2\"><em><strong><span class=\"s2\">Yield:<\/span><span class=\"Apple-converted-space\">\u00a0 <\/span>30 to 32 cookies<\/strong><\/em><\/p>\n<h2 class=\"p5\"><b>Ingredients<\/b><\/h2>\n<ul>\n<li class=\"p6\">1 cup unsalted butter, softened<\/li>\n<li class=\"p6\"><span class=\"s3\"><span class=\"Apple-converted-space\">\u00a0<\/span><\/span>1 1\/2 cups sugar<\/li>\n<li class=\"p6\">6 large egg yolks<\/li>\n<li class=\"p6\">1 tablespoon orange liqueur, such as Cointreau<\/li>\n<li class=\"p6\">1 tablespoon orange zest<\/li>\n<li class=\"p6\">1\/2 teaspoon fresh orange juice<\/li>\n<li class=\"p6\">1 teaspoon baking soda<\/li>\n<li class=\"p6\">1 teaspoon fine sea salt<\/li>\n<li class=\"p6\"><span class=\"s3\">1<\/span>\u00a0teaspoon ground cinnamon<\/li>\n<li class=\"p6\">1\/2 teaspoon ground nutmeg<\/li>\n<li class=\"p6\">1\/4 teaspoon ground allspice<\/li>\n<li class=\"p6\"><span class=\"s3\">1\/4<\/span>\u00a0teaspoon ground cloves<\/li>\n<li class=\"p6\">2 1\/2 cups all-purpose flour<\/li>\n<li class=\"p6\">1\/2 cup turbinado or raw sugar, for rolling<\/li>\n<\/ul>\n<hr \/>\n<p style=\"text-align: center;\"><strong>Read more: <em><a href=\"https:\/\/www.hobbyfarms.com\/4-ways-to-clean-fresh-eggs-before-you-eat-them\/\" target=\"_blank\" rel=\"noopener\">Need to clean your eggs before using them? Here are 4 ways to scrub away dirt.<\/a><\/em><\/strong><\/p>\n<hr \/>\n<h2 class=\"p5\"><b>Preparation<\/b><\/h2>\n<p class=\"p3\">Preheat the oven to 350 degrees F.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p3\"><span class=\"s4\">To the bowl of an electric mixer, add the butter and sugar. Mix on medium for 30 seconds until the ingredients start to come together. Then turn to medium-high and mix for five minutes. Stop to scrape the sides a couple times. <\/span><\/p>\n<p class=\"p3\"><span class=\"s4\">The butter and sugar should be fully creamed (like thick whipped cream) and pale yellow.<span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/p>\n<p class=\"p3\">Mix in the egg yolks just until incorporated, about 30 seconds. Then mix in the orange liqueur (if using), orange zest and orange juice.<\/p>\n<p class=\"p3\">Next mix in the baking soda, salt, cinnamon, nutmeg, allspice and cloves until the spices are evenly distributed throughout the dough.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p3\">With the mixer on medium-low, add the flour a little at a time. Turn the mixer to medium and mix just until incorporated, about 30 seconds. Use a rubber spatula to stir in any flour that may not be fully mixed in. Place the bowl with the dough in the refrigerator for 30 minutes.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p3\">Put the raw sugar in a shallow bowl. Roll the dough into walnut-size balls, then roll them in the sugar to coat each ball completely.<\/p>\n<p class=\"p3\">Arrange on a nonstick baking sheet or a baking sheet covered in parchment paper. The cookies will spread. If you prefer perfectly round cookies without the chance of edges reaching each other, bake nine cookies at a time on a standard cookie sheet versus 12.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p3\">Bake the egg yolk cookies for 12 minutes, until the edges are very slightly browned and the cookies puff a bit. They will flatten and settle as they cool.<\/p>\n<p class=\"p3\">Cool for five minutes before transferring from the cookie sheet to a cooling rack.
