{"id":7939,"date":"2009-02-18T10:42:42","date_gmt":"2009-02-18T10:42:42","guid":{"rendered":"https:\/\/www.hobbyfarms.com\/2009\/02\/18\/harvest-time-cornbread-with-sun-dried-tomato-spread-3\/"},"modified":"2025-07-17T11:12:29","modified_gmt":"2025-07-17T15:12:29","slug":"harvest-time-cornbread-with-sun-dried-tomato-spread-3","status":"publish","type":"post","link":"https:\/\/www.hobbyfarms.com\/harvest-time-cornbread-with-sun-dried-tomato-spread-3\/","title":{"rendered":"Harvest-time Cornbread with Sun-dried Tomato Spread"},"content":{"rendered":"<h2>Ingredients<\/h2>\n<h4>Cornbread<\/h4>\n<ul>\n<li>1 cup yellow corn meal<\/li>\n<li>1 cup all-purpose flour<\/li>\n<li>2 T. sugar<\/li>\n<li>4 tsp. baking powder<\/li>\n<li>1 cup buttermilk<\/li>\n<li>1 egg<\/li>\n<li>\u00bc cup vegetable oil<\/li>\n<li>1 cup fresh, whole corn kernels (or canned and drained<\/li>\n<\/ul>\n<h4>Sun-dried Tomato Spread<\/h4>\n<ul>\n<li>4 oz. cream cheese, room temperature<\/li>\n<li>1 T. onions or shallots, finely chopped<\/li>\n<li>1 T. oil-packed sun-dried tomatoes, finely chopped<\/li>\n<li>salt and freshly cracked black pepper to taste<\/li>\n<\/ul>\n<h2>Preparation<\/h2>\n<p>To make cornbread, combine dry ingredients. Add egg, milk and oil, beat with an electric mixer until smooth, about one minute. Stir in whole corn kernels. Pour into a greased 8-inch square glass baking pan and bake in a 425-degree F oven for 20 to 23 minutes or until a toothpick inserted in the center comes out clean.
