It&#8217;s easily doubled when you need to serve a crowd.<span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/p>\n<p class=\"p3\"><strong><em>Yield: <span class=\"s2\">4<\/span><\/em><\/strong><\/p>\n<h2 class=\"p5\"><b>Ingredients<\/b><\/h2>\n<ul>\n<li class=\"p6\">2 large eggs<\/li>\n<li class=\"p6\">3 slices thick-cut bacon, chopped<\/li>\n<li class=\"p6\">1 pound baby potatoes, halved or chopped into similar size pieces<\/li>\n<li class=\"p6\">1\/2 cup diced green bell pepper, about half a medium pepper<\/li>\n<li class=\"p6\">1 tablespoon chopped fresh dill<\/li>\n<li class=\"p6\">2 tablespoons mayonnaise<\/li>\n<li class=\"p6\">1 teaspoon spicy brown mustard<\/li>\n<li class=\"p6\">1 teaspoon fresh lemon juice<\/li>\n<li class=\"p6\">1\/2 teaspoon fine sea salt<\/li>\n<li class=\"p6\">1\/4 teaspoon ground black pepper<\/li>\n<li class=\"p6\">handful of watercress leaves, about 1\/4 cup<\/li>\n<li class=\"p6\">ground black pepper and dill sprigs for garnish<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h2 class=\"p8\"><b>Preparation<\/b><\/h2>\n<p class=\"p9\">Fill a medium saucepan with water, and bring to a boil over medium-high heat. Gently transfer the <span class=\"s4\">eggs to boiling water and cook at a low boil for 6 1\/2 <\/span>to 7 minutes. Turn off the heat, and transfer the bacon to a bowl, leaving behind the <a href=\"https:\/\/www.washingtonpost.com\/food\/2021\/09\/10\/bacon-grease-fat-tips\/\" target=\"_blank\" rel=\"noopener\">bacon grease<\/a>.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p9\">Place the potatoes in the warm grease, cut-sides down. Return the heat to medium-high. Cook until all sides are browned and the potatoes are tender, about 7 minutes. Transfer the potatoes to a medium bowl. Let cool for 5 minutes.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p class=\"p9\">Add the bacon, green pepper and dill to the bowl. In a small dish, stir together the mayonnaise, mustard and lemon juice. Pour the dressing over the potatoes. Add the salt and pepper.
